Peanut Butter and Coconut Balls

These peanut butter and coconut balls are super easy to make and taste super delicious! They take about 10 minutes to prepare and can be refrigerated for future snacks. I personally love to make up a batch and store them in my freezer. When I need a snack I take them out and munch away! Of course, two at a time is my maximum although I can probably eat the entire tray! Enjoy..


·         1 cup (130g) pitted dates

·         3/4 cup (40g) ground almonds

·         1/2 cup (40g) coconut chips (unsweetened is preferred)

·         2 tbsp. chia seeds

·         1 tbsp. coconut oil

·         1 tbsp. peanut butter

Cooking Instructions

Place all ingredients in a food processor or high-speed blender and blend into a paste. Form walnut-sized balls by pressing the paste together with your hands. Place in the fridge for a few hours so that they become more solid.
