I was pretty hesitant to try this recipe because I was thinking..."who has fish for breakfast" Right? After trying it, all I can say is wow! All of the ingredients work together like magic. The tuna doesn't even taste like tuna because the honey mustard and onions bring out all these wonderful flavours. If you are looking for a health and nutritious breakfast recipe that's super easy to make, you have to give the egg and tuna toast with honey mustard a try!
Ingredients:
- 1 slice of thin, rye bread (cut into two)
- 1 tsp. butter, unsalted
- handful arugula
- 5 oz. (145g) can tuna in brine, drained
- 1 egg, boiled to your liking
- 1 tbsp. Dijon mustard (or regular mustard if Dijon isn't your thing)
- ½ tbsp. honey
- ¼ small onion, sliced
- salt substitute and pepper
Cooking Instructions:
1. Boil the egg to your liking. Toast the bread and spread with the butter.
2. Top the toast with arugula, pieces of tuna and egg slices.
3. Mix the mustard with the honey and drizzle over the egg. Finally top with the sliced onion and season with salt substitute and pepper, to taste. Serve immediately.
